- 1 large purple onion sliced into half rings
- 1 tbsp sumac
- 1 tbsp red wine vinegar
- 1 tbsp olive oil
- 1/4 tsp salt
- 2 tbsp fresh parsley
- Place the onions into a bowl and cover with hot water. Let them soak for 10 minutes to soften them, then drain the onions and pat dry.
- Place back into the bowl and add the sumac, vinegar, oil, salt, and parsley. Mix well, cover and refrigerate until serving.
