Ingredients

purple onion
sliced into half rings

sumac

red wine vinegar

olive oil

fresh parsley
Instructions
Place the onions into a bowl and cover with hot water. Let them soak for 10 minutes to soften them, then drain the onions and pat dry.
Place back into the bowl and add the sumac, vinegar, oil, salt, and parsley. Mix well, cover and refrigerate until serving.
